3 CUPS GRIPE FOOD FLOUR
1 TEASPOON SALT
1 TSP BAKING POWDER
1 TEASPOON SWEET SODA
1 TSP DRY YEAST
2 TSP LUKEWARM WATER
AND A SPOONFUL OF SUGAR
1 CUP MILK
4 TBSP CURD
1 CUP BUTTER

MAIDA, SWEET SODA AND BAKING
POWDER. ADD BUTTER AND MIX WELL.
ADD A MIXTURE OF CURD, MILK AND
YEAST TO IT AND KNEAD A SOFT DOUGH
WELL.
COVER IT AND KEEP IT FOR 4 HOURS,
TILL THE DOUGH DOUBLES. NOW EVERY
TIME TAKE A LEMON SIZED PEDA AND
ROLL IT A LITTLE ON THE FLOURED
SURFACE, THEN TAKE IT IN BOTH THE
HANDS AND PAT IT IN THE SHAPE OF A
NAAN. HEAT A GREASED HEAVY FRYING
PAN OR NON STICK TAVA (GRIDDLE)
NOW REMOVE THE FRYING PAN AND
ROAST THE OTHER PART OF THE NAME
ON LOW FLAME TILL IT BECOMES LIGHT
BROWN. REPEAT THE SAME PROCESS ON
THE REST OF THE DOUGH AND SERVE BY
SPRINKLING PARSLEY ON IT.

200 GRAMS FLOUR
100 GRAMS CURD
TSP SWEET SODA
OIL FOR FRYING
SALT TO TASTE

METHOD OF PREPARATION KNEAD THE
DOUGH WELL WITH CURD. AGAIN AFTER
ADDING SALT TO IT, ADD SWEET SODA
AND KNEAD AGAIN. KEEP IT FOR 2
HOURS. NOW MAKE SMALL LEMON SIZED
BALLS. FROM NOW ON TAKE A 5 CM
ROUND AND HALF A CENTIMETER THICK
VINE. FRY IN DEEP OIL FROM ONE SIDE
FOR HALF A MINUTE. THEN TAKE IT OUT
THROUGH A SIEVE SO THAT ALL THE OIL
IS REMOVED AND ROAST IT ON A NON
STICK PAN TILL IT BECOMES VERY LIGHT BROWN FROM BOTH THE SIDES.

MASHED
4-5 GREEN FINELY CHOPPED CHILIES
ONE-FOURTH CUP FRESH CORIANDER,
FINELY CHOPPED & SALT TO TASTE

ADDING CURD, MILK AND SOME

TREES A LITTLE AND FILL SOME
POTATO MIXTURE IN IT. NOW
MAKE A PEDA OF IT AND TO MAKE
THIN ROTI, ROAST IT ON THE PAN
TILL IT TURNS BROWN ON BOTH
THE SIDES AND SERVE HOT.

250 G GRIP FOOD
WHEAT FLOUR
125 MG WATER
SALT TO TASTE
BUTTER OR GHEE

SIEVE THE FLOUR WITH A SIEVE AFTER
MIXING SALT AS PER TASTE AND AFTER
THAT ADD WATER TO IT AND KNEAD IT
WELL. KEEP THE DOUGH COVERED FOR
10:00 MINUTES. AFTER THAT KNEAD THE
DOUGH AGAIN. NOW MAKE SMALL BALLS OF
THE DOUGH. WITH THE HELP OF A ROLLING
PIN, MAKE ROUND ROTIS AND COOK THEM
ON THE PAN. AFTER THE ROTI IS PUFFED,
TAKE IT DOWN AND APPLY GHEE OR
BUTTER SO THAT THE MOISTURE OF THE
ROTI REMAINS AND DO THIS PROCESS WITH
THE REMAINING FLOUR AS WELL. COVER
THE VESSEL IN WHICH YOU KEEP THE
ROTIS OR YOU CAN EAT IT HOT WHILE
DESCENDING IN THE SAME WAY.

WELL. AND AFTER THAT KEEP IT COVERED
FOR 10 MINUTES. AFTER 10 MINUTES, ADD
SOME OIL TO IT AND KNEAD IT AGAIN. AFTER
THIS, COVER IT AGAIN AND KEEP IT FOR 10
MINUTES. NOW MAKE DOUGH FROM THE
DOUGH AND ROLL 5 TO 6 PURIS ONE BY ONE
WITH A ROLLING PIN.
NOW PUT OIL IN A PAN AND KEEP THE OIL ON
THE GAS FOR HEATING. THE OIL SHOULD BE
VERY HOT, NOW PUT EACH POORI IN THE HOT
OIL AND PRESS IT LIGHTLY.
AND AS SOON AS YOU SEE IT, THE WHOLE
WILL SWELL, YOU TURN IT OVER. WHEN
COOKED FROM BOTH THE SIDES, THE POORI
WILL TURN GOLDEN IN COLOR. NOW TAKE OUT
THE POORI. WITH THIS YOU WILL HAVE SOFT
DELICIOUS PURIS.
